Sounds awesome. I've kinda given up on a proper veggie/herb garden. I just don't have the time and motivation to maintain the plants. So what lives with little attention does well and the rest dies.
Look up Indian spinach recipes, they usually use a whole heap. Palak Paneer is really yummy.
Dill is meant to attract ladybirds and things that eat the bugs that eat your plants. Mine always dies, probably due to lack of water. I always remember it was watering day the day AFTER watering day. *sigh*
coincidently we had a spinach, chicken and riccotta lasagna last night.
dad boils spinach and salts it and oils it a little and eats on the side of everything
actually... if you have a fig tree handy you can make your own ricotta/cottage cheese. get a couple Litres of cheap milk. put it on the stove at the lowest temp for about 45 mins until it heats through, then cut some branches off the fig tress and score the branches so the sap goes into the milk. after a few minutes of stirring the milk with the branches, the milk will curdle nicely. if you get lazy, add some lemon juice to make it curdle faster... it goes crazy then.
WOW! You are braver then I am, I have no skills when it comes to planting anything in the garden. It is awesome that you have all this fresh veggies and fruits to eat regularly.
