Chop them up into smaller bits (getting rid of long intros etc) so more easily accesable for 15 minutes of catwalk music.

for converting to and from mp3 and a few other formats, I recommend
http://www.dbpoweramp.com
if you want to edit the sound itself, audacity (as mentioned elsewhere) is good and free. sound forge and audition are good commercial products you can steal with your favourite p2p program. :)
