It's Monday. Hmmph. Time to make up a new recipe to use these 2 heads of cauliflower I bought at Monterey Market this weekend.
Here's my made-up recipe-an attempt for me to learn to like cauliflower. I think it worked!
Roasted Cauliflower with mustard sauce
Take 1 large cauliflower and remove the core and leaves (roughly 6 cups worth). Break apart or cut into reasonable pieces to fit inside a roasting pan or pyrex dish that has be sprayed with olive oil cooking spray.
Place cauliflower in roasting pan. Brush with 1 tbsp olive oil. Sprinkle with Mrs. Dash, and a little salt. Cover with foil and bake in 375 degree oven for 45 minutes. Remove cauliflower from over, turn pieces, and baste with a sauce made of:
1/2 cup veganaise ( the absolutely best mayo substitute ever)
1/4 cup of mustard
To make the sauce, just whisk the two ingredients together with a few drops of water to smooth it out.
Once you've basted the cauliflower, put it back in the oven, uncovered, for 15-20 minutes, or until cauliflower has a nice golden caramelized look to it. Serve with extra mustard sauce.
