I discovered this bread recipe - Artisan Bread in 5 Minutes that is so simple it is almost nuts. So simple in fact that I've memorized the recipe.

6.5 cups flour
3 cups body temp water
1.5 Tablespoons salt
1.5 Tablespoons yeast

Okay, you may have just saved me a lot of time and $$$ with a bunch of relatives coming into town for Christmas. Talk about your quick and easy breakfasts.

How long do you think the dough keeps in the fridge?

They say 2 weeks. Just make sure you keep it LOOSELY covered or else the gas build up will kill the yeast - or something. I wasn't exactly clear why it needed to be loosely covered only it was bad for the dough.

On the website they have other things you can do with the dough specific to making breakfasts, like baking it in cupcake tins with an egg and bacon.

Trust me, this is amazingly easy. There are only two difficult parts - the initial mixing of the dough - which I bypass with the stand mixer. You will want to add the water, salt and yeast together, give it a stir, and then add in the flour and really make sure you have it fully incorporated. Oh and use unbleached flour.

The second difficult part is the first time you form a loaf, if you've never played with bread dough before. You'll want to make sure you have extra flour on hand while forming the round or else the dough will stick to your fingers.

Oh, and I said let the dough sit for 5 minutes, I actually meant 30 minutes (their recipe says 60 minutes but I didn't find any difference between a 30 minute rest and a 60 minute rest).
