Little-bitty muffin-sized pies! I made whole wheat crust from scratch, and filled the pies with a mix of smoked salmon, cheddar cheese, and fresh spinach. Baked at 350 for 15 minutes, and broiled for a few after to brown, and they turned out to be one of the best things I've made! I served them with some fruit salad I threw together while the pies were baking.

smcinpdx was all delighted that I made TINY PIES! Dancing around, grinning like a silly thing. He really liked them, too. His glee was totally worth all the effort (never mind getting to eat awesome little pies :)
