I learned a great deal about cheese when I was in Switzeland. We went to a cheese factory where they had the most giant wheels of cheese. They would store them for varying amounts of time: 6 months, a year, 10 YEARS! I tried 10 year old cheese and it tasted like the bottom of my shoe...It was gross.
