Potato soup

I posted my recipe for potato soup in someone ELSE'S LJ, so I guess I should post it in my own. Usually I have leftover baked potatoes, but if I don't, I will peel and dice potatoes, and then cook them in chicken stock ( Read more... )

I don't DO measurements. Ummmm, I use about two potatoes, I think, and a couple tablespoons each of chopped celery and onion. Two slices of ham lunch meat, or two slices of bacon.

Instead of yellow or white onion, you can use part of a leek instead, or several green onions. If you do this, then make sure to chop up the green part for sprinkling on top of the soup. And yeah, some grated Cheddar is very nice, too.

My concoctions tend to vary according to what I've got in the fridge. I always have ham or bacon, and usually both.

Beans or bean soup is also a nice warming meal, although if you're gonna be confined in close quarters with little ventilation, beans might not be the best way to warm up...unless y'all like lighting each other's farts as a togetherness exercise!
