Pancakes are a pretty difficult thing to get right. I think they are one of thoose things where you sometimes just get lucky & sometimes don't.

Mmm... I don't really like pancakes, but my mum made some crepe-style pancakes that were freakishly delicious. I guess in a way just really thick crepes, but so good.

this is a good recipe and just remember to put all dry ingredients together and all wet together then mix the two. It is a science experiment so make sure you add the sugar to get the chemical reaction, and let it sit about 3-5 minutes so the chemical reaction can take place before cooking. ( I know you are diabetic but you are eating carbs so I must assume you know what you are doing) If cooking on a stove make sure you cook on med or just slightly higher so not to blacken.

I'm diabetic, but I generally have no problem keeping my numbers in check. I've actually been able to put my diabetes into remission at times, but it kinda keeps coming back like those relatives you just don't like....

Have you ever tried stevia instead of sugar in your recipes? I'm real curious about it; my parents have done pretty well with it now and then but it's hard to figure out cuz it's SO sweet you barely use any.

Yeah I love Stevia!!! Trader Joes (among others) make a version of Stevia that's "cut" with Lactos so it makes it easier to measure. It's still sweeter than sugar but it's not SOOOOOOO sweet that if you use a drop too much it ruins your dish.

In fact I make chocolate with it quite often (simple recipe - bakers unsweetened choc, butter, stevia - fattening, but no sugar)

Yeah it kicks ass... just look for the cut stuff.

Facebook has been known to steal my soul on occasion. I was uploading some photos for the music promoter I help, and that always runs slowly when lots of folks are on.

Your mad skillz can defeat all "welcome" tags!! Ok, maybe it's only worth looking into this one. You have to save some of your time for drawing and sleep and work and all that.
