black_lavender pointed out, posting food pictures without a recipe is bad form, so here I am, with the recipe for the Boring!Cheesemuffins [cheap as cheap goes, easy as easy goes] and a double choice for your Apricot Cake [which works Very Well for other fruits, too].
Cheese Muffin
Ingredients:
1 egg;
90 g flour (0 or 00);
30 g grated savoury cheese;
140 ml milk;
1/2 package of chemical rising powder;
1 pinch paprika;
1 pinch salt;
spice of your choice;
Grease the muffin forms - I use a black anti-graft form - and coat with some flour (or breadcrumbs, or almond bits). Pre-heat oven at ~180°C [electric oven].
Lightly beat the egg, add salt, paprika, milk and cheese [and Spice Of Your Choice].
Mix flour with rising powder in a bowl.
Pour egg-milk mixture on the flour, mix quickly (ideally with a whisk) and pour it in the forms (with a table spoon it's easier).
Put form in oven, find something to do for ~25 minutes.
Take forms out of oven, eat warm or cold, BUT WITH SOMETHING - really, only hard sheep's cheese gave it any taste other than "bland".
Apricot Cake - Death By Butter version
Ingredients:
dough
250 g soft butter;
225 g sugar;
4 eggs;
250 g flour (00);
2 teaspoons rising powder;
cover
100 g butter;
125 g flour;
75 g sugar;
1 pinch cinnamon;
1 kg apricots/ fruit of your choice
Crumble: mix butter, flour,sugar and cinnamon quickly with cold hands (or a fork). Put in fridge.
Dough: beat the butter with the sugar until it's foamy, than continue mixing and add one egg at time. Mix flour with rising powder and a pinch salt and add carefully.
Spread the dough on a greased pan. Cover with the fruit (quartered apricots or plums*, entire pitted cherries, raspberries etc) and the crumble.
Pre-heat oven at 200°C [electric], bake for 35-40 mins.
Apricot cake - No Clogged Arteries version
Ingredients:
dough
30 g yeast (fresh) or 1 pkg dry yeast;
200 ml milk;
500 g flour (00);
1 pinch salt;
60 g sugar;
50 g soft butter;
2 eggs;
zest of 1/4 lemon (better double);
1/4 vanilla (better double);
cover
60 g ladyfingers or other dry, light biscuits;
75 g butter;
75 g sugar;
110 g flour;
1 pinch cinnamon;;
Warm the milk, mix in the yeast, add all other ingredients and knead well. Cover with a tea towel and let rise for ~45 mins in a warm place with no drafts.
Meanwhile, prepare the crumble and put it in the fridge. Prepare the fruit (wash, pit, cut).
Grease an oven pan (about 35 x 40).
Spread dough on the pan, let rise for another 15' under a tea towel.Pre-heat oven at 180°C,
Spread the crumbled biscuits on the surface, then cover with the prepared fruit.
Add the crumble and put in the oven for ~35 mins. The underside should become light brown, the crumble should NOT take colour.
Eat - eventually with some whipped cream to make up for the lack of butter!
