Nutmeg & Orange Cookies

Ingredients:

250 g flour (00)
150 g butter
100 g sugar
1 yolk
zest of 1 orange
1 knifepoint of grated nutmeg & 1 of salt

1 yolk
1 cup rough sugar or cane sugar

Mix ingredients from butter to salt in a bowl. Stir until creamy. Add (sieved) flour.
Shape the dough into 4-cm-diameter rolls. Put rolls in fridge for 2 hours. (they need to be covered - in baking paper or kitchen foil - lest the dough dries out too much and flakes or cracks)
Pre-heat oven at 200°.
Spread sugar on work surface. Take rolls out of fridge, paint them with the remaining yolk and roll them on the sugar.
Cut ~5 mm thick slices from the rolls and arrange slices on baking paper, leaving enough room (they spread out a bit). Put in oven.
DO NOT LET BECOME BROWN!!!!
(12-15 minutes should be more than enough)
Remove from baking paper once cooled down only, lest you wish for instant crumbling.

I find that they pair nicely with a bland black tea.
