Baiser (or meringue, whatever name suits you best)
Ingredients:
2 egg whites
100 g white sugar
1 pinch of salt
4-8 drops of lemon-juice
Pour egg whites and lemon juice into a steel bowl. Whisk egg whites into Extremely Solid Snow (I find this easier to do over a source of mild heat - say, a pot of steaming tea).
Add salt and sugar and whisk into Even More Solid Snow.
Pour teaspoon-sized amounts onto a baking sheet.
Put in oven at 110° for 90 minutes or more.
They look pretty non-impressive if they aren't decorated.
