Coconut & dates cookies
Ingredients
275 g flour
200 g powdered sugar
125 g butter
100 g dates
50 g coconut flakes (dried,grated coconut)
1 egg
1 tablespoon rhum
1 pinch salt
for the icing
175 g powdered sugar
80-100 g coconut flakes
3 tablespoons rhum
3 tablespoons lemon juice
Cut dates in tiny pieces. Mix butter,sugar,salt & egg until creamy.
Mix flour with coconut flakes and fold into cream.
Add dates & rhum.
Form 34x3 cm strips (easiest thing ever: roll the dough out with a rolling pin until it's 3 cm high and then cut out stripes), cover them so that they don't dry & crack and put them in the fridge for 1-2 hours.
Pre-heat oven to 170°.
Take dough strips out of fridge, cut into 4 mm think slices and arrange on baking paper (or well-buttered pan) with a little space left between them.
Bake for about 13 minutes (remember that those cookies are members of the Must Not Become Brown family).
After they have cooled down, coat the borders with the icing mixture (which should have a very thick consistence) and roll in the remaining coconut flakes.
The cookies will need at least another hour to harden.
