Skee-Lo - The Tale of Mr. Morton (covers of old Schoolhouse Rock songs count, right?)
Korn - Word Up
Soul Asylum - Sexual Healing
Fiona Apple - I Want You
Stevie Ray Vaughn - Superstition
Coal Chamber - Shock the Monkey

The Johnny Cash is an exemplary example of a cover. Some of the ones on your list, such as Twist & Shout are technically covers, but better known than the originals. I'm not sure if those will get your more points or less. I'd also stray away from Dylan tunes because those are so frequently covered.

p.s. you totally should have won with the Smiths & NIN

Jonathan Coulton - Baby Got Back

Awww, yeah. :)

Shirley Basey - Get the Party Started
BT4 - All Along the Watchtower (from the Battlestar Galactica season 3 finale)

Those are just the ones off the top of my head. I also second sylvar's recommendation.
