What does it mean to be salt of the earth?

It seems that salt serves two functions: to preserve, and to add flavor. In those contexts, for a Christian to be the salt of the earth I think means a) to be holy and sanctified, preserving the divine presence in humanity, and b) along those lines, to add sanctity and life itself to the world. Or something like that :-)

The lowest of the low pretty much. Evil even. At least, thats what I think of when I hear it.
Or maybe just really savory?

Well, considering Jesus commends us to be the salt of the earth, I'm pretty sure that's not what is meant in this context :-)

Command, or commend? Either work, but I think you'd pick the former.

Yeah, both work. I think I chose commends because He says, "You are the salt of the earth" in one place, which is not necessarily in command form, but rather points towards what is desirable about being a disciple of Christ.
