Mincemeat

On one of my walks it occurred to me that i could use some of the leftover boozy fruit I had hanging around to make a batch of (vegan) mincemeat. So I looked at a bunch of recipes online (interestingly, a noticeable subset of them had ingredients marinating together for at least a day, not cooked0, then got some fresh fruit, and started cooking. Technically, I suppose I should add some kind of meat/fat when using, but I'm not sure that I will. Though nuts do sound good, especially walnuts or pecans. (I tend not to put them in batches of things to avoid any issues with nut allergic people I might end up feeding/gifting.) I've never done anything with frozen custard, which sounds yummy, but tonight, just a little too cold!

The booze I use for making most liqueurs is 100 proof vodka, because the flavor is so neutral, though I have used rum for some tropical fruit flavors, and those turned out nicely. What flavors are you experimenting with?

I made a coffee-orange liqueur that came out quite nicely; so did orange-coffee cherry.
