And I doubt after how badly Jack just hurt him, he'd be falling into Jack's bed for hot and heavy sex. I'd like to think, since you didn't exactly say, that Ianto's footsteps were headed in the opposite direction. After all, Jack's not the only one who can cheat and I think Jack needs to do a whole lot more groveling and kissing up before he's forgiven for that disgusting little display with Gwen.

Saying that, I made it clear that Ianto believes Jack when he says that Jack is not seeing anyone else. He never agreed with Jack that he believes him that he doesn't want Gwen. He knows he does. He's offered proof. Jack's now aware that Ianto is aware of his feelings.
Jack has to make it up to him. And he will. You trust me, right? *hint*

Gwen makes me go GRRRR too!!! (I do adore Eve but Gwen in season 1 & 2 she was particlarly annoying and whiney, to the point of self-centerered and self-righteous, and I too hated the fact that Jack rolled over like a dog in heat. But what can you do?)
I'm already halfway through writing a followup to this fic, but from Ianto's POV (set after this one) so perhaps this will give more insight into why I ended it with the quick give-in.
The other thing to keep in mind is... Ianto has Jack already, however tenuous that hold is. And that hold he has is with sex. If he saw that position threatened, the last thing he's going to do is give up the one thing that Jack comes to him for if he wants to keep Jack...

Ianto's very good at telling people what they want to hear, Jack thinks everthing's fine between them, but I don't think Ianto is going to be mollified that easily. Seeing the way Jack behaved towards Gwen must have hurt a lot. I just can't see Ianto just forgiving and forgetting. Despite Jack's assurances, why should Ianto believe him? It's all very easy for Jack to turn on the charm to get his own way.
