I think Gwen has just found out that Ianto is perfectly able to stand up for himself. The only reason he doesn't usually get confrontational is because he has manners and prefers to be polite. But when he's decided he's been pushed too far, look out, you may find yourself being put rather firmly in your place. Ianto is not afraid to say what he thinks, and if Gwen's held a low opinion of Ianto, Ianto has an even lower opinion of her - and his opinion is fully justified while hers is based on mere speculation. This is part of the reason I can't accept stories which have Ianto and Gwen as best friends - she just has no respect for him and proves it time and again. She just seems to assume that everyone must like her and want to be her friend.
