Okay people, let's get this one straightened out:

palate - physiologically, the hard and soft parts of the roof of your mouth; metaphorically, your skill or experience in discerning flavour and such (e.g. The connoiseur must have a discerning palate)

palette - that thing that holds a painter's paints; metaphorically, a colour combination
