For some reason I took it really hard on sunday. The soup tasted better after it had a night to kinda mellow out. I was just kinda in a bad place. Soups were supposed to be easy, at least that's what Christy always said. Most of the problem was really just my pot was too small ( Read more... )

I didn't mean "easy" as in "can't screw it up" -- I've definitely had some soups go wrong. But there's less of a rush to time many components, because you can always just take it off the burner to put it on hold if you need more time in the middle (to finish chopping your next ingredient, or whatever).

Also, soups always taste better the next day. I've heard some cookbooks recommend cooking them a night before you need them as a general practice. Something about the flavors having time to really soak in...

Big pot definitely helps, though. Big spoon, too.

Nice to hear from you. I've never heard of always keeping soups overnight. In particular, the recipe I was using was designed to be ready to eat in under 30 mins. At least that's how she pitched it.

Sure, they should taste pretty good right away anyway (and who has room for a huge pot in the fridge, anyway?). It's just something about the flavors soaking in... I don't know exactly. To me it's just a good reason to never throw away the leftovers. :)
