so we had our first day of "advanced baking principles" which i think will be a neat class because it's all about taking a recipe and modifying it to suit different dietary restrictions (ie: low fat, reduced calorie, sugar free, lactose free, vegan, vegetarian, kosher, gluten free!) Castoreum’s fun stuff, historically. It was so valued by the Romans, they wrote a fable about a beaver who was being chased by hunters and chewed off the gland that produced it, knowing that was what the hunter was after. Also, they thought at the time that this gland was the beaver’s scrotum (it’s not, but apparently it’s hard to distinguish the two) which allegedly gave rise to the Latin name for the beaver: castor, since they thought the beaver was castrating himself.
