I have a few traumatic stories early on in my life concerning learning how to cook. I could go through the gory details, but I’m not trying to gain your sympathy or get in touch with my inner child. I didn't see it on your ingredients list, so I thought I would mention the little secret about flour. If your cooking chili (or anything with a sauce) for a while and letting water steam out, some people put in a little extra water and about a tabelspoon of flour. It just thickens up the sauce so it doesn't all boil away and you can simmer it longer. Alternatives to flour are cornstarch, bread crumbs, or oatmeal. Just a little tip I thought you might find handy.

I'll have to try that sometime. The chili was thick enough on its own, but I'm sure that information will come in handy quite soon as I've been dealing a lot with sauces.

Heh, I do the same thing. I always cook on Fridays or Saturdays if I'm home, but during the week I will usually make something on Sunday that gets me through the next 3 or 4 days before I have to worry about it again.

Cooking without a recipe is sometimes the best way to go! I make this corn chowder that's basically been a 5 year work-in-progress. Everytime I make it, I change it up just a little bit. Eventually I'll get it just where I want it, heh.

Glad you like the I.R. stuff as well. I really enjoyed the "Welcome to the Working Week" track, mostly for the samples from some documentary on artists in the early twentieth centure (I'm guessing?). I also really liked the manipulation of the MLK quotes. Even though the album is a few years old, I'm always really excited when I stumble onto a random page of new media.

Corn chowder, huh? That seems like a good one for changing up the ingrediants list on...a lot of options.
