Both are correct, so you can do either. The key is consistency - if you decide to exclude the s, then make sure you do it that way throughout the entire thing you're writing (lol obviously). I think ~Strunk and White~ recommend that you keep the s to lessen confusion (since an s is added to every other possessive), but either one is fine.

It's really up to you, though I like omitting the 's because Jones's just looks stupid to me and if you say it out loud it's like JONES UH SES.

That is how I would pronounce Jones's too. And if I spell it Jones' I get to not-type one extra letter! Saving me time and energy.
