Bacon Pasta
1/4 lb of bacon, fried and crumbled.
2/3 of an onion, chopped
3 garlic cloves, not quite minced
1 medium tomato, chopped
1/3 of a cup tomato sauce
1 tsp salt
Sprinkle of Mrs. Dash’s Steak Seasoning
1 Tbsp sugar
1 Tbsp olive oil

1. Fry bacon until crispy.
2. Remove most of the grease with a paper towel.
3. Add 1 T olive oil.
4. Add onion and tomato, sauté for a while.
5. Add garlic.
6. Add salt, sugar, Mrs. Dash.
7. Add tomato sauce.
8. Simmer for about 15-20 minutes.
9. Add crumbled bacon.
10. Simmer for another 5-10 minutes.
11. Combine with pasta.
Serves me and just a little more, because I’m hungry as hell.
Notes:
All these measurements are extremely approximate, and done in retrospect by someone with no head for measurements.
Mrs. Dash was a random addition - it called for red pepper flakes, so I chose a random spicy seasoning.
Next time, if I had it, I would use a can of stewed tomatoes, including liquid, instead of the solid tomato and sauce. I would add it later, in this case, since the tomatoes would be cooked.
I might also leave more bacon grease and not add the olive oil. I can’t feel my arteries screaming, so it needs more bacon.
Thick cut bacon is love.

Pasta With Hot Tomato And Bacon Sauce
1/2 lb. bacon
3 tbsp. olive oil
2 1/2 lg. onions, coarsely chopped
3 lg. garlic cloves, minced
1 (28 oz.) + 1 (16 oz.) can tomatoes, chopped, with liquid
1 tbsp. tarragon or 2 tsp. sugar
2 tsp. salt, or to taste
1/4 tsp. red pepper flakes
1/4 c. minced fresh parsley
1 1/2 lbs. pasta
Butter
Grated Parmesan
Fry bacon until crisp. Drain. Pour all grease except 1 tablespoon from skillet. Add olive oil and onions to skillet. Saute onions until wilted. Stir in garlic, tomatoes, salt, tarragon and pepper. Simmer 30 minutes to reduce liquid. Crumble bacon and add along with the parsley. Remove sauce from heat.
Toss cooked pasta with a bit of butter and then some of the sauce. Top each serving with additional sauce and cheese. Serves 6.
