Matrimony is the ultimate flight because it signifies the end of determining one's own destiny, with all of the frightful responsibility that that entails. As to your dietary difficulties, you might consider rotating your diet (a week or two with non-wheat gluten, a week or two gluten-free, a week or two with everything back in) to isolate the symptoms, if you can stomach the discomfort of the process. Some people even report that regular diet rotations have a detoxifying effect and diminish the symptoms.
In any case, I hope you figure it out in a way that still allows you culinary joy.

the end of determining ones destiny? christ. that has a pretty fatalistic air to it. what about creating a destiny that happens to include one romantic partner with whom you want to share a space and babies with? i happen to be engaged now myself. are you saying that this ultimate flight is a cop-out? a way to conveniently not take responsibility for your future? i mean, these are things i'm thinking about, while also thinking "wow, i really love this guy". continue!
