Probably Indian, but Chinese would run it a close second. IIRC I discovered Indian food in college and had a "Where have you been all my life?!" reaction. Indian also has a good number of vegetarian options...though Chinese stir fry is probably healthier overall.

More in the spirit of the question: Chinese, partly because I like it, and partly because it includes so many different and widely varying cuisines. (So does Indian, but the variety is not quite so wide.)
Chinese stir fry can easily be vegetarian, but with all that oil is it really healthier?
