I love love love summer squash and zucchini stir-fried. Better yet, pan-seared in a little olive oil (so it's still good for you!). Add some onion, garlic, and seasonings... and NUMMY. :-)

I second this - cooked in olive oil is heaven and an excellent side dish (though I've done it for lunch before on its own too!). I also like to cut it into half inch slices and then quarter the slices and put them into spaghetti sauce for the last several minutes it simmers, until it just starts to get translucent.

I also have an amazing chocolate zucchini cake recipe if you want it! :D

Okay, I have to try the olive oil next... my steamed bag effort produced the right texture, but I didn't add any seasonings save a touch of butter and some pepper.

phaeba, sure I'd like that recipe... that might be the only way I can get the boys in the family to eat zucchini!

oh, I love it too! I like to saute cuts of it in olive oil, and then simmer it with some cream & white wine, and sprinkle it with cilantro. I also make this yummy soup fairly regularly.
