Mashed Cauliflower recipes?

Jan 03, 2011 20:29

I'm helping make a family dinner this weekend, and I heard that you can make mashed cauliflower instead of mashed potatoes and have it come out really good. Usually we have some kind of mashed potatoes with an extra - like a loaded potato or cheese added in. Anyone have any similar recipes like that for mashed cauliflower and want to share?

Yeah, here's what you want to do:

--Boil or steam the cauliflower the usual way. Take it out of the pot and put it on spread out on a cookie sheet. Sprinkle it with salt, pepper and whatever other herbs you want (I like paprika). Then put it in an oven at like 400 degrees for about ten minutes, just till you boil the excess water off. Put it back in a dry pot or bowl and mash it up with some butter. Only add cream if it doesn't mash enough-- cauliflower mashes a lot more softer than potatoes.

I love using paprika to season stuff and that sounds perfect - I'll definitely use it. Thanks so much!

Here is a good one. I haven't tried it myself, but she has fantastic stuff. I made her lasagna and it came out great.
