My favorite salad (which I had for lunch today). You would think that cranberries, apple and honey would kill my blood sugar, but it doesn't.
Lettuce or greens
cranberries
walnuts
blue cheese
1/2 a crisp, juicy apple, cut into bite-size pieces
apple-cider vinaigrette dressing
dressing (makes enough for several salads):3/4 cup olive oil
