Todd's Super-Delicious Low-Carb Egg Salad*

INGREDIENTS:
  • 8 large eggs (or 11 med.), hard-boiled & peeled
  • ½ - ⅔ c. mayonnaise
  • 2 bunches green onion, finely chopped
  • ½ bunch of celery, finely chopped
  • 1 lg. jalapeño pepper, de-seeded, finely chopped

I've been using pork skins as cracker substitutes! I'm gonna make this recipe though, it sounds deee-lish!
