So I  decided to make skordalia  greekfood.about.com/od/syrupssauces/r/skordalia.htm tonight. It's a traditional side dish/spread that's usually prepared for March 25th (which happens to be our Independence Day) and it involves A LOT of garlic. It looks right. Garlic is good.

Especially when the next day is a holiday and you are not inflicting it on anyone. :p

Did I say I'll eat it? I like garlic but this is way too garlicky for me. Dave had tried it in the past and liked it so I figured I'd make him a small quantity. So he'll be inflicting it on me. :p

A holiday on hump day? I'm surprised someone hasn't already tried to market that.

You can't pick what day your Independence day falls on, right? Most people prefer a Monday or a Friday for a long weekend, I kind of like it on hump day. It breaks up the week nicely.
