So far, this week's dinners are...
Monday: Shrimp and asparagus over quinoa
Tuesday: Turkey burgers served with mixed greens
Wednesday: French Toast BLTs
Thursday: Herbed Pork Chops with Vegetables
Friday: Fajitas with leftover brisket

Lunches (4 days): couscous with a pesto-like dressing of parsley, cilantro, olive oil, hot paprika, smoked paprika, cayenne, lemon zest, garlic; and roasted butternut squash.
Dinners (4 days): pasta with a real pesto (basil, garlic, pine nuts, olive oil); blanched carrots and broccoli, yellow bell pepper, and sun dried tomatoes.
All packed up in 4 quart plastic containers in my suitcase, and on the way to Seattle with me.
