Mom, that salsa you brought down makes a mean omelet. I put eggs, about half the salsa, about 3/4 of a cap full of vanilla extract, a little milk (maybe a couple of tablespoons or a hair more), and a dash of cloves all together and cooked 'em. Then I added some cheese on top. Much good. Probably would be better if I bothered to make toast with it.

I'm glad you liked it. One of the guys at work made some and I asked him for the recipe. He said just go to WalMart and buy a package of Concord Foods Salsa Seasoning Mix, Mild, chop up 6 - 8 tomatoes and one red (purple) onion, and mix together. Oh, and he adds just a little bit of sugar to it. I did, only I just used half of the onion because my tummy can't take too much raw onion (though it did surprisingly well with this, maybe because of the tomatoes?), plus I added some bell pepper because I had them from my garden.

The packets of mix are cheap ($1.39, I think?). They are in the produce section, not on the row with the spices.

The tomatoes were very juicy, so I poured off the extra juice and put it in the freezer. I think I will add it to soup or maybe to something cooked in my crockpot.
