Wow. We were given two HUGE baskets of zucchini. It seems to be the vegetable that everyone plants and no one eats. I've split two giant ones for the chickens, who love the seeds the most and now I'm going to make some soup for lunch tomorrow, maybe slice some and bread them then bake them for tonite's dinner. You can shred & freeze for bread later in the winter. It puts off a ton of liquid, you kind of have to squeeze the crap out of it when you thaw it for bread, but it works okay.

Zucchini Pancakes

The more you squeeze water out of them, the better they are. Use a little less egg and they are like hashbrowns. A little more egg and they are like dense quiche.

Try adding a little diced ham or bacon. Yum!
