Also for consideration: Cilantro Pesto. We get ours from these guys, http://www.bolaniandsauce.com/home.php , though I'm sure it would be easy to make myself. I'd bring you some in July if it wasn't an issue to figure out how to keep it refrigerated on the way there.
I will consider it! I have a mild suspicion of cilantro (hated it for a long time, but it's growing on me again), but I've never been known to let that stop me from trying a disliked food in a new form (okay...except for baked beans. I...I just can't. I've tried, but I can't.)
