Make cupcakes!

I am on a mission to make some gourmet cupcakes Sunday.  It's time to break in that new stove!

Anyone have any recipes to share?

white chocolate raspberry cupcakes!

i don't have the recipe, as i don't follow them, but you add white cocoa powder to your cupcake batter, as well as to your frosting.

after the cupcakes cool you put comstock raspberry pie filling on top. spread it in a relatively thin layer. then you frost once that gels a bit on top.

they taste sooooooo good.

It's a "Less-Mess Cake" that you can measure, mix, and bake all in one pan, so if using this recipe for cupcakes, keep an eye on them. It's a light cake that goes well on its own or with a simple frosting (powedered sugar, vanilla, milk.) Also try adding some orange zest for another layer of flavor.
Preheat oven to 350. Use an 8" square or 9" round pan.
Mix together:
1 1/2 cups of whole wheat flour
3/4 cups sugar
3 heaping tablespoons of cocoa
1 teaspoon of baking soda
1/2 teaspoon salt

then add...
1 tablespoon of vinegar
1 teaspoon of vanilla
6 tablespoons of oil OR substitute with apple sauce
1 cup cold water

Mix it all together, bake for 35-40 minutes. Let the cake cool for like 25 minutes before you try to remove it from the pan or else your cake will crumble out; or just do like we do and slice it into cubes right in the pan, brownie-style.

Those look vegan. I will definitely have to try those as I am always looking to cut dairy and animal products out of my food.

The most amusing part of your new job... when i started, i met a Dana there and, when she told me her last name, I thought it was the same as yours - spelling is very different, but they SOUND similar when you say them (depending on how you pronounce YOUR last name, because I have friends who have the same spelling but a different pronunciation). Now you DO work there! YAYAYAYAYA!
