In other news, I've been meaning to do a real update. For now, I bring you...
YUM YUM GIMME SUM SALMON
My friend from work taught this to me. This recipe is brilliant because it's screw-up proof and takes 5 minutes of prep time!
INGREDIENTS -
1 salmon fillet
1 lemon
3-4 mushrooms
1/4 an onion
2 cloves of garlic
soy sauce
salt
EQUIPMENT -
large sheet of tin foil
oven pre-heated to 425 degrees
1. Slice mushrooms and onion. Mince garlic. Halve lemon. Set aside.
2. Place salmon fillet, skin side down, in the center of the foil.
3. Salt salmon if desired (it's optional because you'll be adding soy sauce). Add minced garlic. Rub seasoning into salmon.
4. Add vegetables.
5. Add the juice of one half of the lemon. Liberally sprinkle with soy sauce.
6. Fold foil over salmon and vegetables, making a small packet.
7. Place packet in oven. Bake for 20-25 minutes.
8. Remove from oven and carefully open packet (it's steamy!).
9. Squeeze remaining half of lemon over salmon and vegetables. If desired, add more soy sauce.

(when served with rice, this feeds two people. Also, I've been meaning to try this with a little mirin added in... if someone feels adventurous, let me know how it turns out!)
