For those who are curious about this product of my ancestral home in western Scotland -- Taste style: Medium. Quite malty and sweet opening, with a medium body and a generous dry finish. A hint of spiciness perhaps, and seashore on the nose. Food suggestion: Oban is simply lovely with chicken satay or even crystallised ginger.

Maybe that's why I was thinking you needed to do a simple, shaved tomato ice as a pallette cleanser, right after the meat and before the cheese course; sounds so damn good.
Oh and the juxtapositioning of old and new flavors - so much potential there. Damn, getting hungry! I was just contemplating the cheeses you could play off of one another; aged gouda, oooh or aged gruyere and...a really mild (and pricy) feta with watermelon finisher?
And no worries about the continuing to enjoy; that's a given. You had me at "aged balsamic". :)
