I don't know about "official" since they couldn't decide which spelling of Youji/Yoji/Yohji they wanted to go with but...
I asked this to the same friend Neko did and got that answer plus, she said that the "ch" spelling is a lower form of German and it was a pet peeve with her that it not be spelled that way.
Asked another German friend, a University prof and likes to learn languages just for fun (she's currently learning Japanese, her 7th (?) language) and she said that it's spelled, "Schuldig" but pronounced "Schuldich" using a soft pronunciation on the ch sound.
Just in case you're interested, according to the manga spelling of Yotan's real name - translated:
Kudou Youji
That's from the Kanji spelling of his name, romanized. No H's anywhere :)
Thank you for asking around- I keep seeing it spelled differently, and finally wondered what the correct version was. Definitely some interesting linguistics lessons there. That professor sounds amazing! I pick up bits and pieces of many languages all the time, but I'm not yet fluent in any one language. I think I need more direction and focus for that.

I've been cataloging a lot of books lately, which involves checking for consistency in spellings, translations, etc.- must be why I'm noticing these things at the moment.
I don't know if it's incorrect or not, but in the anime commercial break and some of the trinkets sold, they have it spelled 'Yohji'. I know I bought a silver bookmark (sold by movic) of Yohji and it's spelled that way. ^.~ I think either 'Yohji' or 'Youji' is acceptable, but I don't know where 'Yoji' comes from.
I for one use Yoji, but that's only because I knew someone when I was in...middle school (or was it high school? I'll have to double check that) that was named Yoji and spelled it that way. So it's stuck with me that way. Though, I suppose I should make the switch one of these days to having it spelled the way it was in the manga.
