About a year ago, maybe two,
insanitycase asked for Christmas baking recipes. I'm a bit late fulfilling my promise, but I'm just in time for this year's baking extravaganza! Not to mention, I'm hosting Christmas for a small portion of my family this year, so I'll be needing these around for quick reference in a few weeks. :)
Whipped Shortbread

so i was just doing the friendsfriends browse and saw all these yummy recipes and dude! that's totally the shortbread recipe i swear by, minus the cherries. and i don't do balls, i just roll the whole thing out in a dish, poke many times with a fork, and sift a generous bit of confectioners sugar on top when it's done. MELT. in your MOUTH. who knew shortbread was so delicious??
Anyway, hi. :D

I've never done the shortbread balls either - but I'm going to try them this year, because my grandma always did the mush-the-balls-with-a-glass cookies (but never for shortbread), so I think it will be nice. My mom always used a cookie press, but I don't think I can be bothered because I don't have a press, and I am low maintenance (just give me a cookie dammit!).
And this shortbread is way tastier, and less greasy, than the other, slightly more rustic shortbread I had been making.
