I feel the same way! I almost never eat red meat (and when I do, it's buffalo). Usually, I eat chicken once or twice a week, and fish fairly often. But I think tofu is one of the more common ingredients in my recipies these days.
I found I was very unversed in the use of tofu (soft, firm, extra firm, etc..) but from what I understand, the firm and extra firm are the easiest to cook.
