If instant-gratificationing: Home depot carries a line of speaker plates that are modular called "Keystone" - you snap in and out the sorts of connectors you want. At least, they used to - homedepot.com isn't turning it up anymore. Searchs on Lowes still hit, maybe they switched big retailers.
My speakers are relatively cheap bog-standard speaker wire in the walls, Keystone banana jack face plates from Home Depot, and silly fancy cables from wall plate to speaker because I bought the cables at a different time in my life when I was more susceptible to marketing hype.

Thanks for the tips! I have some modular plates similar to what you're describing from Lowe's, but I'm keeping my receipt in case anything online is drastically better in price (especially banana plugs since the ones at Lowe's were pretty pricey). I just settled for Radio Shack on the cable, didn't want to wait for it to be shipped. :-/
