Roast Veg Morocan chunky soup and the magic porridge pot

I started at about 2 pm making this simple but yummy soup, meant for two persons, somehow its turned into a meal for a week for a family of 5!!! How does this happen, I think I need a family of 5!

Many moons ago I made pumpkin soup for me and my flatmate (that'll give you some idea, I haven't lived with anyone other than the Mrs for 6 years) out of the stuff we scooped out of our Halloween pumpkin, we were still eating pumpkin soup at Christmas!!

A good meal should feed many more than it's meant to.

Wow, sounds like we both have a magic porridge pot! I love roast pumpkin, didn't expect to, one of those happy discovery's. Roast pumpkin till all soft then add to risotto rice, bit of saffron and garlic (lashings of butter) and cook through then right at the end fold in as much grated Parmesan as you dare and hey presto!! Far too yummy a meal that sticks to your ribs!! n One of the nicest things I cook!

That sounds amazing, I'm going to have to have a go at making that!!!!

I think pumpkin soup is like ginger beer, once you start making it it just takes over your life!
