i have a request that i'm hoping someone out there can help me out with. my second child is due in about 4 weeks, which will leave my husband and 20 month old son home alone for a few days. i am looking for some recipes that can be made ahead and frozen, and that also have very simple reheat instructions. my husband is not very handy in the ( Read more... )

Let me look through my recipes to see what I have. There are some great books on the subject, Frozen Assets being my favorite. Also, if you google Once a Month Cooking, there are several websites with recipes. My favorite are 30 Day Gourmet and Frugal Mom.

I'll be back to post a few recipes when I find them.

This is one of my absolute favorites!

Salisbury Steak
(Makes 10 patties)

2 pounds ground beef
1 envelope onion soup mix
1 ½ cup dry bread crumbs
½ teaspoon garlic powder
1 tablespoon Worcestershire sauce
¼ teaspoon black pepper
2/3 cup water
2 envelopes brown gravy mix*

Combine all ingredients (except gravy mix) well. Divide into 10 equal sized balls. Shape each ball into an oval patty. Brown patties in skillet sprayed with cooking spray, 7-8 minutes, turning once, until juices run clear.

Cool and freeze meal-sized portions in freezer bags.

To serve: In a large skillet, prepare gravy according to package directions. Add thawed patties and simmer until heated through. Serve over mashed potatoes, rice or egg noodles

*Use on cooking day

Easy!!

BBQ Beef for Sandwiches

1 (3 pound) chuck roast
½ cup chopped onion
1 Tbsp sugar
2 tsp dry mustard
2 tsp salt
½ tsp pepper
1/3 cup vinegar
1 Tbsp Worcestershire sauce
1 cup water
1 cup ketchup

Trim excess fat from roast. Place in crock pot. Combine remaining ingredients in small bowl. Pout over meat and cook until meat is fork tender. Remove meat shred, removing excess fat, put back in broth and mix. Serve in buns.

The beef is best if made at least 24 hours before serving. Freezes well.

Another 30 Day Gourmet recipe.

Make Ahead Mashed Potatoes
(makes about 7 cups)

5 pounds potatoes
1 egg
½ tsp. garlic powder
3 Tbsp. butter or margarine, melted

1 tsp. salt
8 oz. cream cheese
paprika, for color

Peel and quarter potatoes. Place the potatoes in a saucepan and cover completely with water. Bring to a boil, and then gently cook until tender. Drain well. In large bowl, combine potatoes, cream cheese, egg, garlic powder and salt. Mash well by hand or with an electric mixer. Spoon potatoes into spray-treated or greased 3-quart casserole or 9x13 pan. Drizzle or brush melted butter over potatoes. Sprinkle with paprika.

Refrigerate for up to 2 days or label and freeze in freezer bags or rigid freezer containers for later use.

To serve, thaw completely. Bake at 375º for 30-40 minutes until the top is golden.
