Heh, yup, almond-delivery too. :-) The reason I am specifically interested in oatmeal is because I have data that shows it lowers my LDL cholesterol by 15 pts.
Yeah, it's lowER in sugar, but not actually no-sugar. I do savory curry granola or savory steel cut oats when I want no-sugar.
Yeah, mostly for the cholesterol and the saturated fats. From what I've read, the body actually uses cholesterol and makes around 50-75% of what it needs (articles vary on the amount). It uses saturated fat to synthesize it. The cholesterol we eat fills in the gap, but then excess cholesterol and saturated fat goes on to do bad stuff in our bodies. I realize as I write this that my memory of the process is kind of fuzzy so maybe I'll go re-read some of those articles. I guess I could also use egg whites which have 0 cholesterol and fat (hurray for biological membranes!), but I guess I also liked the challenge of making this recipe vegan.
Also, I never thought to ask what kind of cholesterol is in eggs. Gosh. Maybe it doesn't matter, but worth looking into.

I'm surprised it's that low in sugars with all the dried fruit. And yeah, they sound really dense -- lots of water needed!
