I can't comment on your fluid sexuality (cause mine's stuck in one gear - which my husband appreciates :D) but I'd say be honest with him in that you are flattered but that right now he's not the one for you... I'd only go into details if he asks for them unless he's a friend whom you want to know this anyway but don't let him hang on, cause I can't see you as a person who wants to hurt him more than is necessary

For your second question, I think it can be totally normal to have times when one gender is more compelling than the other.
