I'd say about 60% of places that are visa accessible print receipts with your card number on them. It's one of the reasons why you should be careful to always take your visa receipt (and check your statements!)
Most places however, print one receipt that they keep that has your number on it, and one for you that doesn't. I'd had to use someone's card number from their receipt if I accidentally charged them the wrong amount.
