Greetings, folks. My mother is hosting a baby shower for one of my cousins at the end of the month, and I have been put in charge of baking cookies. I have pretty much perfected the basic chocolate chip (*buffs nails on shirt*) and also make a mean ginger cookie, but the latter are not quite seasonally appropriate? Awesome oatmeal-and-raisin cookies:

170 grams of butter
1/2 cup white sugar
1 cup brown sugar
1 egg
vanilla
2/3 cup flour
1 tsp cinnamon
1/2 tsp salt
1/2 tsp baking soda
3 cups oats
1 cup raisins

Mash butter + sugar together, add the egg. Mix flour + salt + cinnamon + soda and add to the wet stuff, and then add the oats and raisins. Possibly you might need a little extra water if it's too dry. Bake in 175 degrees Celsius until a little brown at the edges.

I would totally do that, excepting my aunt is already making her super-amazing lemon squares of which I will eat approximately a whole pan because oh my god. It is a good call, though. I do love lemon.

I am very relaxed. I am the most relaxed. Still jobless and getting a bit broke, but I have hopes.

Cookies with jam! I like cookies with jam. And you can put different knids or other things for variety, bonus.

Which isn't to say I wouldn't make them if my mom figured we'd want them.

My favorite cookie recipe is simple, but a couple of little details make it magical. I use this recipe:

But sub in coconut oil instead of canola oil and turbinado sugar (evaporated cane juice) instead of white sugar.

Everyone freaks out when they try them, and fail to believe me when I say they are vegan.

Oooh. Those sound tasty. And may come in handy if we have any vegans in the crowd (I don't think so? I'll have to as if mom knows.) I'd have to suss some vegan chocolate, though.

they are SO GOOD, seriously. you'd never even know or care that they were vegan.

also, MOST chocolate is vegan. i use ghirardelli dark chocolate chips.
