I'm gonna go for All-Clad, based on the ratings in the Equipment Corner at America's Test Kitchen.

We use Caphalon professional non-stick, and believe me if there were any problems with the Aluminum, we wouldn't be using it. My wife is paranoid about that sort of thing. On a separate note, are you going to update your user info for your new location? Just being nitpicky :P I'm sure everything that is crazy right now will calm down in a bit, and you will come to love CA.
