What IS Vancouver food?

I was watching this really cool and interesting show on Discovery last night. 
It's called "Anthony Bourdain: No Reservations".
It's a show about travel and food, but it's really interesting in that he goes to different cities and tries local food. But the working class local food.
In this episode he went to Baltimore, Detroit and Buffalo.

It's like "What is Winnipeg food?" Basically people will tel you Ukranian food - perogi's, cabbage rolls, borscht, etc.
