Some of the food that you described above sounds completely outside the box of what I normally eat. I was watching No Reservations on the travel channel a couple of weeks ago and Anthony Bourdain ate a whole guinea pig. I think he was in Peru. I also noticed that you and I picked two out of the three most important traits: Sense of humor and open-mindedness.

I liked the information on Ecuadorian food that you found, it sounds like you will be trying some interesting new things such a guinea pigs. I also liked the fact about the expatriates living in communes that are placed in valleys. That sounds amazing to see, I hope that you get to see some incredible landscapes.
